Carrot Top Pesto
INGREDIENTS
3 cups carrot tops (approx 6-8 carrots)
1 cup basil, or any green you have on hand (cilantro, salad, etc)
3-4 cloves garlic
1/2 cup pine nuts (or walnut, or any nut)
1/2 cup grated parmesan cheese (optional)
1 lemon, zest and juice
1/2 - 3/4 cup of extra virgin olive oil
Salt and pepper
INSTRUCTIONS
1 In a skillet over medium heat, roast nuts until browned
2 Place all greens, nuts, cheese and garlic in food processor
3 Pulse until finely chopped
4 With processor running, drizzle in oil to desired consistency
