Flaxseed Bun

Flaxseed Buns

The holy grail of gluten and grain-free baking, these high-protein, low carb buns look and tastes like real bread! Made with nutrient-rich flaxseeds, butter and eggs, they’re great for baking in big batches and frozen (pre-sliced) for later.

Ingredients

Serves 6

  • 150g flaxseeds, ground or whole

  • 1tsp bicarbonate of soda

  • 1/2 tsp sea salt

  • pinch black pepper

  • 3 eggs, beaten

  • 1/2 tbsp maple syrup

  • 2tbsp lemon juice (you can also use apple cider vinegar)

  • 3tbsp butter, melted (you can also use melted coconut oil)

  • 3tbsp water

  • 1/2 tsp dried herbs (such as thyme, bruised fennel or caraway seeds)

  • 1tbsp white sesame seeds, for sprinkling (optional)

How To:

1. Preheat the oven to fan 180ºC/350ºF/Gas Mark 6 and line a baking tray with baking parchment.

2. Mix the dry ingredients together in a bowl using a fork. Beat in the remaining ingredients (except the sesame seeds) and leave the batter to rest for 5 minutes to thicken up. If using whole flaxseeds, mix with just the water and beaten egg first then allow to stand and thicken for 30 minutes before mixing with the rest of the ingredients.

3. Take 4-5 tablespoons of batter and shape into a bun with your hands. Place on the prepared baking and use wet hands to shape/smooth the top and to press down lightly so that the bun is 5mm-1cm thick. Repeat with the rest of the batter, sprinkling the tops with sesame seeds (if using) and gently pressing them in.

4. Bake in the oven for 20-22 minutes until the buns spring back to touch. 5. Remove from the oven, transfer to a wire rack to cool completely, then slice in half and fill.

Alternatives:

Ingredients

  • 2 cups ground golden flaxseed

  • 5 egg whites

  • 2 egg yolks

  • 4 tablespoons olive oil or coconut oil

  • 1 tablespoon baking powder

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons pysllium husk powder

  • 1 teaspoon salt

  • 1/2 cup boiling water

Instructions

  • Preheat the oven to 180C/350F degrees.

  • Place the flaxseed, baking powder, salt and psyllium husk powder in a bowl and whisk the ingredients together.

  • Add the egg whites and egg yolk and whisk well.

  • Add the oil and apple cider vinegar and whisk until the mixture is combined.

  • Pour the boiling water into the mixture and whisk to combine. The mixture will be slightly sticky.

  • Using wet hands, roll the dough into 6 balls and place on a parchment lined baking tin.

  • Bake for 30 minutes.

ingredients

1 Cup Mozzarella, shredded

1 oz Cream Cheese

1 Cup Almond Flour

1/4 Cup Ground Flax Seed

1 egg

1/2 Tsp Baking Soda

instructions

Preheat oven to 400

Line baking sheet with parchment, set aside

In a medium bowl, melt cream cheese and mozzarella together (microwave ~1 min)

Stir cheeses together until smooth, add egg and stir until combined

In separate bowl combine almond flour, ground flax seed and baking soda

Mix cheese and egg mixture into dry ingredients and stir until dough forms soft ball (it will be sticky)

Using wet hands, gently roll dough into 6 balls

Roll tops in sesame seeds if desired and place onto lined baking sheet

Bake for 10-12 minutes until golden brown

Let cool for 15 minutes

notes

Coconut flour is NOT a direct substitute for almond flour, you must adjust the amount

Dough will be sticky but should be able to form balls. Use wet hands to roll balls. If absolutely too wet to mold then add an additional tbsp of almond flour until pliable

4 large rolls work great for sandwiches and burgers, 6 smaller is good for dinner rolls
