Vegan Sweet Potato Stew

INGREDIENTS

  • 2 tbsp avocado oil

  • 1 cup diced red onions

  • 2 large garlic cloves minced

  • 6 cups cubed sweet potatoes

  • 1 can black beans rinsed and drained (15 oz)

  • 1 tsp turmeric

  • 1/2 tsp cumin

  • 1/2 tsp paprika

  • 1/2 tsp ginger

  • 1/2 tsp sea salt

  • 1/4 tsp all spice

  • 4 cups vegetable broth

  • 1 cup unsweetened plain almond milk

  • 1 cup store-bought marinara (any works)

DIRECTIONS

  • sauté the onions and garlic in avocado oil on medium heat for 3 minutes.

  • then, add the sweet potatoes and sauté another 5 minutes. stir often.

  • next, add the black beans and spices and mix well. then, add the veggie broth, almond milk and marinara.

  • cook for another hour and stir periodically.

  • serve with rice if you would like and enjoy!
