Vegan Sweet Potato Stew
2 tbsp avocado oil
1 cup diced red onions
2 large garlic cloves minced
6 cups cubed sweet potatoes
1 can black beans rinsed and drained (15 oz)
1 tsp turmeric
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp ginger
1/2 tsp sea salt
1/4 tsp all spice
4 cups vegetable broth
1 cup unsweetened plain almond milk
1 cup store-bought marinara (any works)
DIRECTIONS
sauté the onions and garlic in avocado oil on medium heat for 3 minutes.
then, add the sweet potatoes and sauté another 5 minutes. stir often.
next, add the black beans and spices and mix well. then, add the veggie broth, almond milk and marinara.
cook for another hour and stir periodically.
serve with rice if you would like and enjoy!
