Chocolate-Coconut Banana Bread

INGREDIENTS

5 tbsp melted butter, or melted coconut oil

3 very ripe bananas, mashed

1/2 cup pure maple syrup

2 eggs, or 2 flax eggs if vegan

1 tsp baking soda

1/2 tsp salt

1 tasp vanilla extract

1 tsp cinnamon

2 cups white whole wheat flour, can substitute all-purpose/gluten free all-purpose

1 cup dark chocolate chips

1/2 cup unsweetened coconut flakes

METHOD

  1. Preheat the oven to 350. Grease a 9x5 loaf pan

  2. In a large bowl, mash your bananas using a fork. Add the melted butter and maple syrup. Mix until incorporated. Whisk in the eggs.

  3. Add the baking soda, salt, cinnamon, and vanilla. Mix well. Using a rubber spatula, add the 2 cups of flour and combine until barely incorporated. Be careful not to overmix.

  4. Add half of the chocolate chips into the batter and mix slightly. Add the batter to your greased pan.

  5. Sprinkle half of the coconut flakes on the top of the loaf and using a fork, gently push them down. Sprinkle the rest of the chocolate chips and coconut flakes.

  6. Bake for 58-60 minutes or until a toothpick inserted comes out clean. Let cool. Enjoy!
