PB & Honey Rice Crispy Treats
Replacing the typical marshmallow with pb brings these simple treats to the adult table. Goji berries, raisins, or pieces of sweet figs work great as add ins.
Also can play with toppings: chocolate mousse, fruit jam, or just as they are.
Ingredients for an 8 in square pan.
Melt together:
1 c pb
1/2 c grass fed butter (1 stick)
1/2 c honey
Mixing bowl:
2 c organic puffed rice
pinch of sea salt
Optional: chocolate chips, vanilla, nuts, shredded coconut, dried fruit
Directions:
Melt the pb, butter, and honey over medium heat until well combined
In a large bowl, mix the puffed rice, sea salt, PB MIX (from above), until evenly coated
Transfer to 8in square pan, and put in fridge at least 20 min, or several hours, chilled until ready to eat
