Dark Chocolate Avo Pudding
Sister recipe to the cookies, both equally delicious! We bought little plastic shot glasses and gave a couple table spoons of pudding in each, along with blueberries and raspberries for a little fourth of july treat.
Ingredients:
2 very ripe avocados
1/3 cup cacao powder (I use Cacao Magic superfood protein blend by Philosophie)
2 tbsp. almond milk or canned coconut milk
1 tbsp. vanilla
1/2 tsp. chia powder
2 tbsp. eatingEVOLVED original chocolate spread(or melted chocolate of choice)
1/4 cup maple syrup
Pinch of sea salt
2 tbsp. vital proteins collagen peptides, alternative 1 tsp unflavored gelatin
Optional: add in 1/2 tbsp. or more of peppermint extract for a mint chocolate flavor
Directions:
1. Add all of the above ingredients to your vitamix or food processor and blend until well combined and creamy. Taste test and adjust if needed.
2. Spoon the mousse into a container and store in fridge to chill or until ready to be served.
It will last for a few days in fridge.
Alternative:
2 ripe avos
1/4 c honey, coconut sugar or maple syrup
1/2 c cacao powder
1 Tbs coconut oil
1 Tbs vanilla
1/2 tsp sea salt
1/4 c water or coconut milk
1/4 c nut butter
1 tsp unflavored gelatin (Great lakes grass fed is a great brand)
Optional toppings: crushed nuts, cacao nibs, chocolate chips, shredded coconut, dried fruit, bea pollen
Blend all desired ingredients in a food processor, store in fridge.
