Cauli Pizza Crust
Cauliflower (whole, or frozen already riced)
2 eggs (3 if super big cauli)
1/4 c parmesan (or other nut cheese)
1-2 garlic cloves
Herbs (thyme, oregano, basil)
Salt and pepper
minced peppers
parchment paper for baking
Process:
Preheat oven to 450
Line a baking sheet with parchment paper (NOT foil, the veggies stick right to it). Some people have suggested using a pizza stone to preheat in the oven rather than a baking sheet, but i have a tiny kitchen and like minimal equipment.
Chop cauli into chunks, throw into blender. Fill the blender about half way or more with water so all cauliflower is covered and floats above the blade.

Cauli is a bit sticky, so watch for little pieces flying around!
Size varies. one small cauli floret will be about 1 pizza. If you have a large one, you could even make 2! Ive settled to about 2 cups of cooked cauli rice per pizza. The rest stays in the fridge as cauli rice for other meals all week!
Pour out the cauli into a cheese cloth or strainer, and try to squish out all the water here. It is important to be as dry as possible, or anything you cook with will have extra liquid and be a bit soggy.
Once drained, place all of the cauli onto the sheet pan, and place into the preheating oven for 5-10 min. This bakes it to decrease cooking time later, and also helps remove excess moisture. You should just start to see browned edges.
While cauli is baking, prep the other materials for the crust. Place the parm (or other cheese), chopped herbs, pepper, etc. into a large bowl. Once the cauli is ready, drop in about 2 cups of cauli and mix. Place any extra cauli in a Tupperware to use for meals later (my favorite tip, is to order takeout food and leave out the grains, and use my own cauli rice as a replacement ;)
Another great tip is to learn to cut an onion properly here. I love grilled onion. You can heat up some butter, garlic, and other veggies (like peppers) you would like to add into the crust here.
Make your pizza into a circle, rectangular, or maybe some mini pizzas. You can also use the base to the start of a quiche (by placing in a glass baking dish and throwing a bunch of stuff on top!) I like the rugged edges rather than perfectly tucked, so i try to press from the middle and outwards so it folds out naturally, but you may like the way others look.
Bake the crust for about 30 min (check every 10)
While baking, heat up any sauces or veggies to add
Throw the sauce and ingredients on top, and cook another 5-10 min as necessary to melt the cheeses or broil for a nice char.
