Cauliflower Quiche (FAVORITE!)
Okay, Im pretty proud of this one. Our original recipe made up out of love for breakfast and all things cauliflower.
Ingredients:
Crust, Bake @ 450 in small baking dish, until golden brown (butter pan first, or use parchment). Approx 30 min.
Cauliflower (about 3/4 c of riced cauli)
2 eggs
1/4 c parmesan (generous pour)
salt/pepper
crushed red pepper
garlic
good quality butter (high fat, 0 sugar, etc)
Fun to add some greens, spices, herbs, cheeses! (I used some chopped green onions)
Quiche Topping:
4 eggs
1 large portabella mushroom
Additions (handful kale, chopped)
1/2 chopped onion
garlic
Here, i used chopped onions, green peppers, mushrooms and kept it simple with parm cheese) TBH, i think this was my favorite yet. Adding sausage makes it weird to me as leftovers, and fancy cheeses are expensive, and you need lots to tell a difference. This appears to be best bang for buck and max flavor!
Sauces
Kick ass salsa (with no added sugar!)
Macadamias (or other seeds/nuts)
Creamy Roasted Jalopeno Salsa (Daves gourmet)
Roasted green bell peppers, tomatillos, garlic, jalopenos, distilled white vinagar, salt, green onions, garlic, cilantro, cumin
Roasted Red Pepper Hot Chutney Spread
Fire roasted bell peppers, arbole/habanero peppers, sunflower seeds, garlic, oil, distilled vinegar, sea salt)
Bake crust 40 min at 450. Once golden brown, remove crust from parchment, and place back into backing dish. If not using parchment, use butter, but also fully pull crust up from pan once cooked. This is bc its much easier now than to try to pull out when eggs are on top!
While crust is in oven, prepare the veggies. Sautee some butter and garlic (or good high smoke point oil), and add onions, mushrooms, and whatever youd like. Have some fun here :)
Mix the 4 eggs with the mix of veggies, and pour on top. Bake for another 40 min or so at 400 (lower temp). Might be able to increase this, but i wanted to ensure an even bake rather than burnt egg shell and uncooked egg inside.
Beautifully served with some favorite sauces, sliced avocado, strawberries, and kick ass coffee or matcha latte. <3
