Firelight Quinoa Granola Clusters

15 min prep, 45 min cook, makes 8 cups

Ingredients (mixed dry)

  • 4 c rolled oats

  • ½ c quinoa, toasted (medium heat in pan, toast until pop, 6-8 min, then rinse)

  • 1 ½ c coconut chips

  • ½ c sesame seeds

  • ½ c sunflower seeds

  • 2 Tbs flaxseeds

  • 2 Tsp cinnamon

  • 1 tsp cardamom

Whisk wet ingredients

  • ½ c olive oil

  • ½ c syrup

  • ½ c honey

  • 1 ½ tsp vanilla

  • Plus: ¾ dried fruit (optional) or lemon zest, apple chips

  1. Preheat to 350, Line two large baking sheest with parchment (place in center of oven)

  2. Stir the quinoa and seeds, etc, and whisk the liquids. Pour the wet into the dry.

  3. Spread onto the baking sheets, flattening out, bake 20 min

    • Toss & redistribute granola

    • Flatten again- HARD!

    • Swap oven spots, and cook another 20 min.

  4. Remove from oven, and sprinkle on dried fruit. Let cool 15-20 min. Do not break it up until fully cool or you will lose your clusters!

  5. Once cooled, then you can break them apart. Store up to a month.
